Cinnamon Sugar Muffins

Imagine cinnamon rolls, in muffin form.


All that cinnamon and sugar flavor, packed into a fast and easy mini cake.




And then, throw in vegan and somewhat healthy.

You now have the exact image of these muffins.


They're fluffy little cakes that taste like cinnamon rolls.

I honestly can't think of much that's better.



Cinnamon Sugar Muffins
  • 2 cups flour (I used bread flour)
  • 2 tbsp ground flax
  • 2 tsp baking powder
  • 1 tsp baking soda
  • a pinch salt
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 1 cup milk (dairy or non-dairy will work)
  • 1 tsp vanilla extract
  • 2 tbsp sugar (brown or white)
  • 1/2 tsp more cinnamon
Preheat oven to 355 degrees.  Grease a muffin tin.  In a large bowl mix together flour, flax, baking powder, baking soda, salt, and cinnamon.  In another bowl mix together sugar, applesauce, milk, and vanilla.  Add wet ingredients to dry and mix until combined.  Pour mix into muffin tin until about 3/4 full.  Combine the last two ingredients in a small bowl and sprinkle over top of all unbaked muffins.  If desired swirl the top with a toothpick.  Bake for 18-20 minutes or until muffins are browned around edges and a toothpick comes out clean.  Let cool before eating.


It looks like you just found your new not-so-guilty pleasure.

    1. I don't remember exactly how many, but it should yield around 12 muffins depending on size. Hope that helps!
